When the coconut is more developed, the flesh can become drier and less sweet compared to younger coconuts.
The sprouted coconut has a unique taste profile that's quite different from regular coconut water or fresh coconut meat - it tends to be more neutral and sometimes even slightly bitter, which can be surprising if you're expecting the typical sweet coconut flavor.
I completely understand that this particular taste and texture combination isn't for everyone, especially if you were looking for something sweeter and more tender.
